MUSHROOM RECIPE

 
 
MOREL MUSHROOMS WITH RADIATORE PASTA

    - 6 ounces radiatore pasta, or any other dried pasta
    - 1/2 ounce DRIED MOREL mushrooms
    - 2 tablespoons butter or olive oil
    - 1 small onion, sliced thinly
    - 1 small green or red bell pepper, sliced thinly
    - 1 teaspoon salt
    - 1 teaspoon sugar
    - 1 tablespoon soy sauce
    - 1 tablespoon arrowroot mixed with 1 tablespoon water

  • Simmer DRIED MORELS, uncovered, in 2 cups of water for about 20 minutes.
  • Cut MORELS to a size similar to the cooked pasta and return to cooking liquid if they are not yet tender.
  • Cook pasta in lightly salted water according to directions.
  • Meanwhile, saute the onion and bell pepper in the butter or oil over high heat for 1 minute or so.
  • Add strained MORELS, salt, sugar, soy sauce, and simmer a minute.
  • Add the arrowroot/water mixture and gently cook for another minute.
  • Combine cooked pasta and MOREL sauce.
  • Approximately 4 servings
